Stabilizer and emulsifier for dairy specialities, such as mousses and whipped creams.
This stabilizer has the particularity of prolonging the conservation, of facilitating the emulsion and of improving the lightness and the unctuousness.
Use: 20 g of product for 1 litre of cream. Put the quantity of cream to be worked into the mixer. Turn to 1st speed and sprinkle the corresponding amount of fixative.
Ingredients: E401 stabiliser, dextrose.
May contain traces of soya, milk, egg, gluten, nuts, sulphites and lupin.
Properties and characteristics :
Prevents over-spreading, facilitates the emulsion of the cream, and gives a greater smoothness to the palate.
Stabilizes prepared creams and in particular whipped cream, prolongs their conservation and improves their lightness.
Storage: Store away from moisture and heat in its hermetically sealed packaging.
