To create this dairy-free M_lk chocolate, Callebaut has replaced milk with a 100% vegetable alternative: Chufa. Also known as Tiger Nuts or Cyperus esculentus, Chufa is a plant specific to certain Mediterranean regions. Its dried and ground tubers are used to produce this excellent, tasty and high-fibre milk substitute.
