Dulcey is smooth, creamy chocolate with a velvety and enveloping texture and a warm, blond color. The first notes are buttery, toasty and not too sweet, gradually giving way to the flavors of shortbread with a pinch of salt
Courbe tempérage / Tempering temperatures:
Fonte: 45-48° C, cristallisation: 26-27° C, travail: 28-29°
Due to different temperatures, the drops may melt in transit. They still can be used but they may not arrive in the original wafer shape.
