Tonka bean brings extraordinary aromas to your recipes in cooking, chocolate-making and pastry-making: its lightly caramelized, vanilla flavor is wonderful for flavoring chocolate, creams, desserts, sorbets, cooked or glazed fruits. Tonka beans can also be grated into savory recipes, giving a caramelized, vanilla flavor to sauces accompanying veal, pan-fried liver, fish and seafood.
Tonka beans come from a tree in the Fabaceae family, native to Venezuela. It is also grown in the West Indies. Its fruit, called fève, has a bitter almond, honey and vanilla fragrance.
Culinary uses: chocolate, creams, desserts, sorbets, fruit, meat, fish, seafood.
