Ascorbic acid appears as white or slightly yellowish crystals with a tangy, acidic taste. It is an organic acid with antioxidant properties.
It enhances flavour and colour, improves leavened doughs, and acts as an antioxidant and preservative. It can replace lemon in many recipes, helps prevent oxidation, and extends shelf life. It also helps maintain the colour of fruits, vegetables, and deli meats. In baking, it supports yeast activity and improves dough elasticity.
Recommended dosage: 0.5 g to 5 g per 100 g of preparation.
